Pork Chops

Ribs

Pork Ribs have a long tradition in the old style world of barbecue, ranking with brisket and pulled pork in the competitions as a true art form. Like traditional Barbecue, pork ribs should be cooked low and slow with a good dose of smoke. Preparing ribs in a slow cooker is an alternative.  Ribs recipes.

Sliced Smoked Bacon

Our bacon is sugar and salt cured. The flavor is unique and the shrinkage is almost nonexistent. This is our most popular item. If we are sold out we can put you on our bacon waiting list.

Smoked Ham
Our hams are brined in a special salt-and-maple sugar solution that seals in the natural flavor, then slowly smoked over hickory wood chips for up to 12 hours. The end result is a ham like no other, a perfect balance of fresh pork flavor and the kiss of the smokehouse. Baked Ham recipes.

Shoulder Roast

This is John and Martha's favorite pork cut (well, after bacon). This cut has great marbling, so the meat is incredibly rich and tender. We like to slow cook it for hours in a crock pot with some root vegetables. The result is juicy and tender. Shoulder roast recipes.

Breakfast Sausage Links

A classic mild blend of sage, salt and pepper. We like to par boil our sausage before grilling or pan frying. You'll be pleasantly surprised by how much fat is in your pan.

Ground Pork
Ground pork has the ability to blend with a huge range of flavours, particularly the rich, exotic herbs and spices of Asian cuisine. You can simply substitute ground pork in all your favourite ground meat recipes! Some ground pork recipes.

Ham Hocks

The hock is the lower portion of a hog's hind leg. Ham hocks are generally used to flavor dishes such as soups, beans and stews that require lengthy, slow cooking. Ham hocks recipes.

Liver

Liver is rich in iron and Vitamin A and has an unabashed flavor that nicely complements that of its usual companion, onion. Liver can be cooked with dry heat, say by grilling or sautéing it, but it becomes very tough if it's cooked beyond medium rare.   Since liver has very little fat, you might want to baste it.

Leaf Lard

Originating from the area surrounding the kidneys, this lard, once ground and rendered, makes the finest lard for pastries. Must be rendered before using. Instructions for rendering.

Great for soups, stocks and beans. Many of our customers by meaty bones for their dogs, too.

WHOLE & HALF PIGS

A whole pig serves a family of four for about 6-9 months. We raise a pig for you until it weighs about 200-225 pounds (six months ).  Your pork is prepared for you by a local USDA-inspected butcher who you instruct how to cut and wrap your cuts.  We bring your meat to you wrapped, labeled and frozen.  A $100 deposit is due when you reserve your pig (or hald pig), with the balance due when the pork is delivered. RAISE YOUR OWN

Do you want to raise your own pig or two? We sell piglets at eight weeks and up, which you can raise for your own freezer (called “feeder pigs”). Pigs are great at tilling, clearing, and fertilizing land. If you want a garden site for next year the pigs will do all the work for you – you won’t even need to put gas in your tiller. Feeder pig prices vary depending on age (a 12-week old will cost more than an 8 week old) and the time of year (prices rise a bit in the spring). Call or email for prices.

PIG ROASTS

We love a pig roast! Our roaster pigs are lean and delicious. Call early to reserve your pig. We can deliver your pig to any number of butcher shops to prepare it for the roast. Call or email for availability and to make a reservation. Price is $2.50/pound, and you pay the butcher separately. We can also recommend people to roast the pig for you.

FREE DELIVERY

Delivery of all products is free within 20-mile radius of Upper Jay, NY: generally speaking, Upper Jay, Jay, Keene, Wilmington, Keene Valley, Au Sable Forks and Lake Placid. A delivery fee applies to destinations 20-50 miles from Upper Jay. Of course, you may pick up your meat in Upper Jay at no charge. Call ahead to make sure we'll be home.

EGGS

We have a flock of free range hens that produce delicious eggs in a rainbow of shell colors. Nothing beats farm fresh eggs. $3.50 per dozen. Available year-round.

CHICKEN, TOO!

Each summer we raise a group of broilers on pasture. Let us know if you’re interested in farm fresh chicken raised on grass without hormones or antibiotics – a delicious alternative to factory farmed chicken found in the grocery store. We sell whole chickens for $3 per pound.
